Haideti sa facem o mica analiza a E-urilor cele mai folosite in alimentatie pentru ca, pana la urma, presupun ca stiti ca nu toate E-urile sunt rele. Atunci, sa le si identificam.

Din pacate, n-am gasit informatii detaliate decat in engleza si nu am prea mult chef sa traduc, deci sper sa cunoasteti limba.

Pentru inceput, guma arabica (E414) :
Gum arabic, a natural gum also called gum acacia, is a substance that is taken from two sub-Saharan species of the acacia tree, Acacia senegal and Acacia seyal. It is used primarily in the food industry as a stabilizer, but has had more varied uses in the past, including viscosity control in inks. Its E number is E-414.
TOXICOLOGICAL STUDIES

Acute toxicity - No data available. Sensitivity reactions have been reported in
man, e.g. asthma in printers (Brown & Crepea, 1947; Bohner et al.,
1941; Sprague, 1942; Fowler, 1952).
Gum sensitization is an occupational risk for predisposed
persons. In the case of inhalation, respiratory symptoms predominate
(Gelfand, 1943). Allergenic reaction can also occur following the
ingestion of arabic gum (Gelfand. 1949).

OBSERVATIONS IN MAN

Nine patients with nephrotic oedema received one to six
intravenous injections of acacia over periods up to eight weeks, with
total doses ranging from 80-325 g. There were no signs or symptoms of
liver enlargement, and no other complications. Five of these patients
excreted in the urine 5.5% to 38% of a single dose during periods
ranging from 10 to 30 days, respectively (Johnson & Newman, 1945).

Comments:

This gum has a traditional use in foods and pharmaceutical
preparations. The biochemical information available is sparse but it
has been demonstrated in the rat that this gum is completely
metabolized when it comprises less than 10% of the diet. Allergenic
reactions have been reported in man following ingestion of the
substance. Studies of the metabolic fate in man and potential body
storage are desirable.

Acidul fosforic (E338):
OBSERVATIONS IN MAN

Studies on 15 students, who drank 2000-4000 mg of phosphoric acid
in fruit juices every day for 10 days, and on 2 males who received
3900 mg of phosphoric acid every day for 14 days, revealed no
observable change in urine composition indicative of a disturbed
metabolism (Lauersen, 1953). The long-continued daily intake of
5000-7000 mg of NaH2PO4 (corresponding to 1500 mg of P) did not
produce adverse effects (Lang, 1959). Similarly a daily intake of
6000 mg of NaH2PO4.2H2O was tolerated for 15 days without
difficulty (Lauersen, 1953).

Thomas (1972) administered orthophosphates to some 37 renal
calculi patients for periods of up to 8 years with usually favourable
results. Two groups of anionic inhibitors of mineralization were found
in the urine and the more potent of these was found to be present at a
lower concentration in the urine of affected patients when compared
with normal controls. Alkaline phosphate (K2HPO4) was found to cause
increased concentrations of these mineralization inhibitors in urine
(acidic and neutral phosphates increased only the less potent
inhibitor).

In a study in which the daily basal diet of 4 men contained
450 mg calcium and 1400 mg phosphorus, supplementation with 750 mg
phosphorus as phosphoric acid for 1 week resulted in a slight decrease
in urinary excretion of calcium. When the treatment was continued for
12 weeks, there was a further decrease in urinary calcium excretion
(Malm, 1953). In another study, groups of 6 women previously on a
basal diet containing 300 mg calcium and 800 mg phosphorus, received a
diet containing 1500 mg calcium and 1400 mg phosphorus, or 1500 mg
calcium and 800 mg phosphorus. The high level of phosphorus in the
first diet resulted in decreased calcium utilization when compared to
the second group (Leichsenring et al., 1951).

Numerous animal studies have shown that excessive dietary
phosphorus causes an increase of plasma phosphorus and a decrease in
serum calcium. The resulting hypocalcaemia stimulates secretion of PTH
which in turn increases the rate of bone resorption and decreases
calcium excretion. These homeostatic adjustments to high dietary
phosphorus may result in bone loss and calcification of soft tissues
in animals.

Ca o paranteza: acestea sunt substante ce se regasesc in Pepsi. Am citit analiza unei bauturi cu fructe care continea 9 E-uri si 4% fruct si am vrut sa vad pe unde se claseaza si Pepsi. Surprinzator, rezultatul a dus la concluzia ca mai bine bei Pepsi, pentru ca in acesta intalnim doar E-urile de mai sus (dovedite ca neprezentand un pericol pt sanatate decat in cantitati mari -> ca orice lucru comestibil de altfel, si apa in cantitati mari face rau) plus un stabilizator.

Dar nu acesta e subiectul.
Ce alte E-uri cunoasteti si ce proprietati au?

Nu cunosc alte E-uri si sincera sa fiu cand cumpar un produs nu ma uit niciodata ce si cate E-uri contine. E rau? Ar trebui sa tin cont de ele?

Pai, cam da, se stie ca unele E-uri sunt nocive pt sanatate, mai ales pt copii, batrani si femei insarcinate. In Jurnalul National se face zilnic analiza unui produs si vorbeste de riscurile pe care le aduce acela. E amuzant (vorba vine) cand vezi produse gen sucuri de fructe sau salata de peste cu 4% fruct sau 4% peste, restul numai si numai E-uri :D

Cred ca ar trebui sa caut sau sa cautam o lista cu E-urile cele mai rele pt sanatate si chiar sa tinem cont de ele cand cumparam alimente.

Eu, una, ma uit pe ambalaj doar sa nu aiba prea multe E-uri :)) Ca deja sunt foarte multe produse cu E-uri si conservanti.

Romanii nu prea verifica etichetele alimentelor atunci cand merg la cumparaturi. La intrebarea "Atunci cand cumparati alimente, obisnuiti sa verificati daca contin E-uri nesanatoase?", 59% au raspuns ca nu verifica, 28% spun ca verifica si 13% nu au raspuns sau nu au stiut ce sa raspunda. Cei mai atenti la etichetele mancarurilor sunt bucurestenii. 48% dintre cei care locuiesc in Capitala spun ca verifica daca alimentele pe care le cumpara contin E-uri. Dobrogenii sunt insa la polul opus. Doar 15% dintre locuitorii acestei zone verifica daca alimentele contin E-uri nesanatoase.

Lista E-urilor suspecte si periculoase
E150, E172, E173, E141 – coloranti, E477 – emulsificator (ultimele doua sunt nocive doar daca sunt consumate in exces). E102 sau tratrazina (colorant galben), foarte nociv, se gaseste in bauturi, mustar si gem, poate genera tumori tiroidiene sau crize de astm bronsic, E110 sau Sunset yellow (colorant galben) – cancerigen, se gaseste in dulciuri, prajituri, budinci, diverse sucuri, E120 (colorant) provoaca alergii, E124 sau Ponceau 4R (colorant rosu) – toxic produce tumori pe glanda tiroida, se gaseste in mezeluri.

Lista E-urilor toxice
E220, E221, E222, E224 (sulfiti – conservanti) produc boli intestinale si alergii, se gasesc in carnea de hamburgeri, cartofi deshidratati, fructe confiate, prajituri, bere, vin, otet de vin. E338 (acidifianti) afecteaza tubul digestiv, se gasesc in produsele cu gust acru sau acid ridicat. E339, E340, E341 (saruri de topire) afecteaza tubul digestiv. E407 (gelifiant) afecteaza tubul digestiv, E450 (emulsificator) afecteaza tubul digestiv, E461, E463, E465, E466 (agenti de incarcare) afecteaza tubul digestiv. E230 (bifenil – conservant), interzis in Australia recent si in UE, dar permis la noi, poate produce boli de piele, se gaseste in citrice, E231 (ortofenilfenol – conservant), posibil si cancerigen, interzis in SUA si Australia, produce boli de piele, E232 (conservant) poate produce boli de piele. E200 (conservat), extrem de toxic si periculos deoarece suprima din organism vitamina B12, E320 (butil-hidroxi-anisol BHA – conservant), posibil si cancerigen, se gaseste in cartofi deshidratati, uleiuri vegetale, supe concentrate, sosuri, guma de mestecat. E321 (acidul benzoic – antioxidant), posibil si cancerigen, creste de asemenea nivelul colesterolului, se gaseste in margarina. E311,E312 (antioxidant) ataca sistemul nervos. E330 (sarea de lamaie) devine cancerigen daca este consumat in exces.

Lista E-urilor cancerigene
E131, E123, E142 (colorati), E211 (acidul benzoic si derivatii sai – conservant), interzis in SUA, dar permis la noi, se gaseste in unele bauturi racoritoare, E213, E214, E215, E217 (conservanti), in unele bauturi racoritoare. E230 (conservant), E621 (glutamatul de sodiu), potentiator de arome. E631, E632 si E633– inozinati. Guanilati – E627, E628, E629. Rinoglucidele (potentiatori de gust si aroma) E634 si E635. in ziua de azi nimic nu mai e 100% sanatos, peste tot numai chimicale. cand cumpar un lucru ma uit sa vad cate Euri are si sper sa fie cat mai putine

Mai ai timp sa te uiti cate E-uri are ? ..doar daca stai sa citesti la toate se inchide magazinul pana mai apuci sa cumperi :lol:

Adevarat graiesti musiu, basca din cate stiu nici nu mai scrie Exyz acum. Scrie denumirea completa deci.... te mai ia si durerea de cap pe langa timpul pierdut :p

au renuntat la scrierea cu Euri (gen E183, E257, E457) pentru ca se mai uitau si oamenii (putini, e adevarat) pe cutie/punga si vedeau ca nu sunt tocmai sanatoase alimentele respective.



pinturicchio, ai si tu dreptate. o spunem ca pe o gluma, dar nu stiu cat e de ras. pana la urma, e vorba de sanatatea noastra (pe care nu stim sa o pastram).


eu zic ca e cel mai bine sa nu mai mancam nimic. asa stim ca nu de mai atingem de Euri :lol:
